The Company
From modest beginnings in the early 1970s as a 700-foot bakery in Los Angeles, The Cheesecake Factory (www.thecheesecakefactory.com) has grown to become one of the most successful and progressive casual dining operations in the country, with locations in more than 25 states and long lines waiting at every one of them.
The problem
The Cheesecake Factory prides itself on the ultra-efficiency of its operation. But as the company has grown, maintaining tight control over the variables of food cost spending has become an increasingly complex issue.
"It all boils down to one big issue," explains Bill Lyons, Vice President of Systems Development. "What menu items are sold and then gauging their actual food costs versus projections at the unit level. This is how we can control waste and roll-up a global outlook on all purchasing and rebate activity."
The solution
Given its progressive nature, it is no surprise The Cheesecake Factory was one of the first restaurant enterprises to embrace a supply chain cost control solution – Tibersoft IQ.
"We have always sought out technology that could make our operations run smoother and guarantee consistency and quality in every location," states Lyons. "Tibersoft was willing to work with us to make their technology adapt to our operating system in order to enable us to run the application here in our corporate offices."
The results
The Tibersoft solution has enabled The Cheesecake Factory to aggregate data in their language and deliver the kind of analytics that enables the company to take quick action in controlling costs. They are assured of getting the right item at the right price. Automated alerts have proven particularly helpful in monitoring compliance as well.
"We find IQ to be very handy when it comes to negotiating new contracts with manufacturers," says Lyons. "We use it as a decision support tool to wade through the cloud of distributor data and come up with the information to drive the best deal."
What's next?
In the last few years, The Cheesecake Factory has opened more than 30 restaurants in the continental United States and Hawaii, and Tibersoft has been there to help. Again, from Lyons: " We have very high expectations on food quality and profitability, and Tibersoft is one of our partners in maintaining that goal along the entire supply chain."
